CHEF DONALD PREPARED A PRIZE-WINNING ONION PIE.


Today it is onion pie! Where will this lead in the 21st century?
Chef Donald's Advice: "If you use frozen pie shells, remove the thin paper before you fill it."Remove Paper



Ingredients:

4 medium thinly sliced onions
1/4 lb. of salted butter
3 eggs beaten
8 oz. sour cream
1/4 teaspoon of salt
1/2 teaspoon of pepper
Dash of Tabasco sauce, to taste
1 unbaked pie shell (deep dish is best)
Grated Parmesan cheese

DIRECTIONS:


Saute onions in butter. Combine eggs and sour cream and add them to the onion mixture. Add seasonings and mix well. Pour into the pie shell and sprinkle with plenty of Parmesan cheese. Bake at 450 degrees F for 20 minutes. Then bake at 325 degrees F for 20 minutes.Enjoy!

Deluxe Apple Pie

Ingredients:
  • 6 cups thinly sliced apples
  • 6 teaspoons granulated sugar
  • 6 teaspoons brown sugar
  • 1/3 cup of all purpose flour
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup butter
  • 1/2 teaspoon of lemon rind
  • 6 tablespoons of whipping cream
  • 1 double (ie. top and bottom) pie shell

Directions:
  1. Prepare pastry and line 9" pie plate, reserving some for the top crust.
  2. Core, peel and slice apples.
  3. Combine sugars, flour, cinnamon and salt together, then mix with the apples.
  4. Spread apple mix into unbaked pastry shell.
  5. Dot with butter; sprinkle with lemon rind.
  6. Pour whipping cream over top; then cover with top crust, sealing carefully and making slits to allow steam to escape.
  7. Bake in hot oven (450°) for 10 minutes.
  8. Reduce heat to 350° and continue baking 20 to 30 minutes or until apples are cooked.

This is the best apple pie recipe that I have encountered.
